Plants, temperature, and Midwest freight—not a food-scientist licence.
Online or on campus

Upper Midwest food systems are plants and miles, not tasting menus. This MSc starts with process flow, sanitation as operations (not a lab coat costume), and cold chain as energy, doors, and truck appointments. You will map a freeze-thaw risk, write a customer scorecard response, and keep licence fences visible so graduates do not advertise as regulatory officers. Dual-pathway students declare primary mode. English-medium waiver includes U.S. regionally accredited bachelor's. HLC and DEAC stay institutional. Campus plant visits, if offered, produce the same written operations analysis online students complete from redacted data; a tour is not a hidden mark. You will treat temperature as energy, doors, and appointments, not as a food-science licence. Faculty will fail capstones that impersonate FDA/USDA officers or that advertise RD/RDN or PCQI automatic status. Seasonal surge, allergen scheduling, and retailer scorecards are Midwest operating facts. Employers may still require separate plant certificates; this MSc does not replace them. The award is academic operations. It is not a food-scientist licence, not a dietetics credential, not automatic PCQI or lead-instructor status. Assessment does not substitute for plant-required certificates employers may still demand.
Thirty-six credits: process operations, cold chain and freight, quality-and-recall literacy (non-licence), and a plant/logistics capstone. Three-credit courses. Identity-checked exams.
